Ingredients

Proteins

  • 2 whole eggs
  • 2 whole salted egg yolks, boiled

Sauces & Seasonings

  • 150 g all-purpose flour
  • 50 g almond flour
  • 30 g unsalted butter, melted
  • 15 g caster sugar
  • 5 g baking powder
  • 2 pinch sea salt
  • 100 g unsalted butter, room temperature
  • 20 g icing sugar
  • 10 g black sesame seeds
  • 15 ml vegetable oil for waffle iron

Other

  • 100 ml whole milk
  • 80 g dark chocolate (70% cocoa)
  • 15 ml honey
  • 5 g vanilla extract
  • 2 whole fresh strawberries

Instructions

    In a bowl, whisk together eggs and milk until well combined

    In another bowl, sift together all-purpose flour, almond flour, baking powder, and sea salt

    Make a well in the flour mixture and pour in the egg-milk mixture

    Gently fold in melted butter, caster sugar, and vanilla extract until just combined, being careful not to overmix

    Chop dark chocolate into small chunks and divide into 4 portions

    Preheat waffle iron and brush generously with vegetable oil

  7. 7

    Pour one quarter of waffle batter into the center of the preheated waffle iron

    Quickly place a portion of dark chocolate chunks in the center of the batter

    Top with remaining waffle batter to cover the chocolate completely

    Close the waffle iron lid and cook until golden brown and crispy

    Carefully remove the waffle and place on a warm plate

    Repeat steps 7-11 for remaining three waffles

    In a bowl, beat room temperature butter until pale and fluffy

    Press boiled salted egg yolks through a fine sieve into the butter

    Add icing sugar and beat until light, fluffy, and well incorporated

    Top each warm waffle with a generous dollop of salted egg yolk butter cream

    Drizzle honey over the cream and waffle

    Sprinkle black sesame seeds generously over the top

    Garnish with fresh strawberry slices on the side

    Serve immediately while waffle is still warm and chocolate is melting inside
