Preheat oven to 200°C (400°F). Pat the strawberries dry with paper towels.
Toss strawberries with butter and brown sugar in a roasting pan.
Roast strawberries for 12-15 minutes until edges are caramelized and fruit is tender.
Remove from oven and sprinkle with sea salt. Let cool for 5 minutes.
In a bowl, whisk mascarpone cheese with honey and vanilla extract until smooth and creamy.
Divide mascarpone mixture into serving bowls or plates.
Spoon warm roasted strawberries and their juices over the mascarpone cheese.
Dust lightly with icing sugar and garnish with fresh mint leaves. Serve immediately.
