Japchae (Korean Glass Noodle Stir-fry)

Ingredients

Proteins

  • 150 g beef sirloin

Aromatics

  • 1 tsp minced garlic
  • 0.25 tsp black pepper
  • 0.5 medium onion
  • 0.5 whole red bell pepper
  • 0.5 whole yellow bell pepper
  • 1 tbsp minced garlic

Sauces & Seasonings

  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 2 tbsp sesame oil
  • 1 tbsp sesame seeds
  • 2 tbsp cooking oil

Vegetables

  • 1 medium carrot
  • 100 g spinach
  • 50 g shiitake mushrooms

Other

  • 200 g Korean glass noodles

Instructions

    Prepare Beef: In a bowl, marinate sliced beef sirloin with soy sauce, sugar, minced garlic, sesame oil, and black pepper. Let it sit for at least 15 minutes.

    Cook Noodles: Bring a pot of water to a boil. Add glass noodles and cook according to package instructions, usually 6-8 minutes, until transparent and tender. Drain, rinse with cold water, then drain thoroughly. Cut the noodles into shorter lengths if desired. Toss with a little sesame oil to prevent sticking.

    Blanch Spinach: Blanch spinach in boiling water for 30 seconds. Immediately transfer to an ice bath, then squeeze out all excess water. Set aside.

    Sauté Vegetables: Heat a little cooking oil in a large pan or wok. Stir-fry carrot, onion, shiitake mushrooms, red bell pepper, and yellow bell pepper separately until tender-crisp. Remove from pan and set aside.

    Cook Beef: In the same pan, add a little more cooking oil if needed. Stir-fry the marinated beef until fully cooked and lightly browned. Remove from pan and set aside.

    Make Dressing: In a large mixing bowl, combine soy sauce, sugar, sesame oil, and minced garlic (all for dressing). Whisk well until sugar dissolves.

    Combine & Serve: Add the cooked noodles, all the stir-fried vegetables (carrot, onion, mushrooms, bell peppers, spinach), and cooked beef to the dressing bowl. Toss everything together vigorously until well combined and evenly coated. Garnish with sesame seeds. Serve warm or at room temperature.
