Prepare Pumpkin: Cut pumpkin into small pieces. Steam until very soft.
Cook Sago: Bring water to a boil in a pot. Add sago pearls and pandan leaf (if using). Cook, stirring occasionally, until sago pearls are translucent with only a tiny white dot in the center.
Rinse Sago: Drain the cooked sago and rinse under cold water to remove excess starch and prevent sticking. Set aside.
Make Pumpkin Paste: Mash the steamed pumpkin until smooth. Add rock sugar and coconut milk. Mix well until sugar is dissolved and the mixture is creamy.
Combine Ingredients: Gently fold the cooked sago pearls into the pumpkin-coconut mixture.
Steam Pudding: Pour the mixture into heatproof bowls or a large steaming dish. Steam over high heat for about 20-25 minutes, or until the pudding is set.
Serve: Let cool slightly before serving. Can be served warm or chilled.
