Thai Basil Chicken with Jasmine Rice and Fried Egg

Ingredients

Proteins

  • 280 g Chicken breast
  • 1 egg Large egg
  • 2 tbsp Fish sauce
  • 60 ml Chicken stock

Aromatics

  • 8 cloves Garlic
  • 20 g Thai holy basil
  • 2 whole Red chilies

Sauces & Seasonings

  • 1 tbsp Palm sugar
  • 2 tbsp Vegetable oil

Other

  • 150 g Jasmine rice (cooked)

Instructions

    Dice the chicken breast into bite-sized pieces

    Mince the garlic and slice the red chilies

  3. 3

    Heat oil in a wok or large pan over high heat

  4. 4

    Add garlic and chilies, stir-fry for 30 seconds until fragrant

  5. 5

    Add diced chicken and stir-fry until cooked through, about 6-7 minutes

    Pour in chicken stock, fish sauce, and palm sugar

  7. 7

    Simmer for 2 minutes, then tear in fresh basil and toss gently

  8. 8

    Cook jasmine rice according to package directions in a separate pot

  9. 9

    Heat oil in a non-stick pan and fry the egg until yolk is runny

  10. 10

    Plate the rice, top with basil chicken and its sauce, then place fried egg on top
