Steamed Threadfin with Preserved Olive Leaves

Ingredients

Proteins

  • 400 g Threadfin fillet (or whole fish)

Aromatics

  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 0.5 tsp White pepper
  • 2 stalks Green onions, sliced (for garnish)

Sauces & Seasonings

  • 1 tbsp Light soy sauce
  • 1 tsp Sugar
  • 1 tbsp Cooking oil

Other

  • 3 tbsp Preserved olive leaves

Instructions

    Rinse the threadfin fillet/fish and pat dry thoroughly with paper towels. Make a few diagonal slits on the thickest part of the fish if using a whole fish.

    In a small bowl, combine preserved olive leaves, minced garlic, minced ginger, light soy sauce, sugar, and white pepper. Mix well.

    Place the fish on a heatproof plate. Spread the olive leaf mixture evenly over the top of the fish.

    Bring water to a boil in a steamer. Once boiling, place the plate with the fish into the steamer.

    Steam for 8-12 minutes for a fillet or 10-15 minutes for a whole fish (depending on thickness), until the fish flakes easily with a fork.

    Carefully remove the plate from the steamer. Heat cooking oil in a small pan until smoking hot. Pour the hot oil over the fish and olive leaf mixture.

    Garnish with sliced green onions and serve immediately with rice.
