Wash and peel the Chinese White Pears. Cut off the top part to create a lid, then carefully scoop out the core and some flesh, creating a cavity.
Place the Chuan Bei and Rock Sugar into the pear cavities.
Put the filled pears into a deep bowl, pour Water around them, and cover with the pear lids.
Steam the pears in a steamer over high heat.
Reduce heat to medium and continue to steam until the pears are very tender.
