Cut bacon strips into small pieces and fry in a skillet over medium-high heat until crispy, about 5-7 minutes. Remove and set aside on paper towels.
Preheat oven to 200°C (392°F). In a small pan, melt butter over medium heat and sauté minced garlic for 1 minute until fragrant.
In a large mixing bowl, combine sweet corn kernels, cooked bacon, garlic, mayonnaise, mozzarella cheese, and cheddar cheese. Mix well until evenly distributed.
Season the mixture with salt and black pepper to taste.
Transfer the corn and cheese mixture to an oven-safe cast iron skillet or baking dish, spreading evenly.
Bake in preheated oven at 200°C for 12-15 minutes until the cheese is melted, bubbly, and slightly golden on top.
Remove from oven and immediately garnish with chopped green onions and sesame seeds while the cheese is still hot and bubbly.
Serve immediately while hot in the cast iron skillet or transfer to a serving dish. Enjoy as a shared appetizer with friends.
