Rinse walnuts and white rice. Soak them in 1000ml water for at least 4 hours, or overnight.
Drain the soaking water from the walnuts and rice. Combine the soaked walnuts and rice with 800ml hot water in a blender. Blend until very smooth.
Pour the blended mixture through a fine-mesh sieve or cheesecloth into a pot, pressing down to extract all liquid. Discard the solids. This step ensures a very smooth soup.
Place the pot with the strained liquid over medium heat. Add rock sugar and salt. Stir continuously to prevent sticking, bringing it to a gentle simmer.
Once the rock sugar is fully dissolved and the soup has thickened slightly to your desired consistency, remove from heat and serve warm.
