Rinse and soak sweet almonds and bitter almonds in warm water for 30 minutes. Drain.
Peel, core, and cut the snow pears into large chunks.
Rinse and pit the red dates.
Bring water to a boil in a large pot.
Add the soaked almonds, pitted red dates, and pear chunks to the boiling water.
Reduce heat to low, cover, and simmer for 60 minutes.
Add rock sugar to the pot.
Continue to simmer for another 15 minutes, or until rock sugar is fully dissolved and pears are tender. Serve warm.
