Ingredients

Proteins

  • 250 g Minced pork
  • 20 g Salted fish

Aromatics

  • 10 g Scallions, white part for mixing, green part for garnish
  • 5 g Ginger, grated
  • 0 pinch White pepper

Sauces & Seasonings

  • 15 ml Light soy sauce
  • 5 ml Sesame oil
  • 10 g Cornstarch
  • 5 g Sugar

Other

  • 30 g Water chestnuts, finely chopped
  • 30 ml Water

Instructions

    Prepare Salted Fish: Rinse the salted fish thoroughly. If very salty, soak in water for 15-20 minutes, then pat dry. Mince the salted fish finely.

    Combine Ingredients: In a mixing bowl, combine the minced pork, finely minced salted fish, chopped water chestnuts, white part of scallions, and grated ginger.

    Season the Pork Mixture: Add light soy sauce, sesame oil, white pepper, cornstarch, sugar, and water to the pork mixture. Mix thoroughly by hand in one direction for 2-3 minutes until the mixture becomes sticky and well combined.

    Form and Steam: Transfer the seasoned pork mixture to a shallow, heatproof dish. Flatten it evenly. Place the dish into a preheated steamer.

    Steam: Steam over high heat for 12-15 minutes, or until the pork is fully cooked through and firm.

    Garnish and Serve: Carefully remove the dish from the steamer. Garnish with the remaining chopped green part of scallions. Serve hot with steamed rice.
