Steamed Cod Fillet with Preserved Lemon and Aged Tangerine Peel

Ingredients

Aromatics

  • 3 slices ginger
  • 2 stalks spring onion
  • 0 pinch white pepper

Sauces & Seasonings

  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp sugar
  • 1 tbsp cooking oil

Other

  • 400 g cod fillets
  • 2 slices preserved lemon
  • 0.25 piece aged tangerine peel

Instructions

    Pat cod fillets dry with paper towels. Season lightly with salt and white pepper (optional).

    Arrange ginger juliennes and shredded tangerine peel on a heatproof plate. Place cod fillets on top.

    Sprinkle minced preserved lemon evenly over the fish.

    Heat water in a steamer until boiling. Carefully place the plate with cod fillets into the steamer.

    Steam for 8-10 minutes, or until the fish is cooked through and flakes easily. Cooking time may vary depending on thickness.

    While fish is steaming, mix light soy sauce, sesame oil, sugar, and white pepper in a small bowl.

    Once steamed, carefully remove the plate. Remove the cooked ginger and tangerine peel from the fish. Arrange fresh spring onion slices over the steamed fish.

    Heat cooking oil in a small pan until smoking hot. Carefully pour the hot oil over the spring onions on the fish to sizzle, then immediately pour the mixed sauce over the fish. Serve immediately.
