Rinse fermented black beans thoroughly under running water and chop coarsely. Mince garlic finely.
Cut soft tofu into 3cm cubes and arrange gently on a steaming plate or shallow dish.
Heat cooking oil in a wok or pan over medium-high heat.
Add minced pork and stir-fry until it changes color and becomes fragrant, about 3 minutes.
Add garlic, ginger, and fermented black beans. Stir-fry for 1 minute until fragrant.
Pour in soy sauce, oyster sauce, and chicken stock. Add sugar and stir well.
Mix cornstarch with water to form a slurry. Pour into the sauce and stir until thickened, about 1 minute.
Pour the hot pork and black bean sauce evenly over the tofu cubes.
Bring a steamer or pot of water to a boil. Place the tofu dish on the steamer rack and steam for 8-10 minutes until heated through.
Remove from steamer carefully. Drizzle with sesame oil and garnish with fresh cilantro and sliced red chili.
Serve immediately while hot.
