In a large bowl, combine the ground pork, water chestnut starch, light soy sauce, oyster sauce, sesame oil, sugar, white pepper, water, and minced ginger.
Mix well in one direction until the mixture is sticky and well combined. This helps create a springy texture.
Transfer the seasoned pork mixture to a heatproof shallow dish and flatten it into an even patty. Make a slight indentation in the center for the egg yolks.
Place the salted egg yolks on top of the pork patty.
Bring water in a steamer to a rolling boil. Place the dish with the pork patty into the steamer.
Steam for 20-25 minutes, or until the pork patty is cooked through and the egg yolks are set.
Carefully remove from the steamer. Garnish with chopped green onions (optional) and serve immediately with hot rice.
