Soak the dried snow fungus in water until softened, about 30 minutes.
Trim off the hard yellow base from the softened snow fungus, then tear it into small pieces.
Peel and deseed the papaya, then cut it into bite-sized chunks.
Bring water to a boil in a pot. Add the torn snow fungus.
Reduce heat and simmer the snow fungus for 30 minutes until it becomes tender and slightly translucent.
Add the papaya chunks and rock sugar to the pot.
Continue to simmer for another 15-20 minutes, or until the papaya is tender and the sugar has dissolved.
Add goji berries (if using) and simmer for a final 2 minutes.
Serve warm or chilled.
