Soak red dates and goji berries in warm water until softened. Drain and pat dry. Pit the red dates and slice them thinly.
Gently heat full-fat milk and caster sugar in a saucepan over low heat until the sugar dissolves. Do not boil. Remove from heat and let it cool slightly.
Lightly whisk egg whites in a bowl until just combined and slightly frothy, but not stiff.
Gradually pour the slightly cooled milk mixture into the whisked egg whites, stirring constantly to combine thoroughly.
Strain the milk and egg white mixture through a fine-mesh sieve at least twice to remove any lumps and achieve a smooth texture. This is crucial for a silky pudding.
Divide the strained mixture evenly into individual heatproof bowls. Garnish each bowl with the prepared sliced red dates and goji berries.
Cover each bowl with cling film or a plate to prevent water droplets from entering. Steam over medium-low heat for 12-15 minutes, or until the pudding is just set but still slightly wobbly in the center. Do not oversteam.
Carefully remove from the steamer. Serve warm or chilled.
