Ingredients

Proteins

  • 500 g chicken thigh (boneless, skin-on), cut into bite-sized pieces

Aromatics

  • 3 slices ginger, julienned
  • 0.5 tsp white pepper

Sauces & Seasonings

  • 1 tbsp light soy sauce
  • 1 tsp Shaoxing wine
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tsp cooking oil

Other

  • 15 g dried cordyceps flower, rinsed
  • 8 pieces red dates, deseeded

Instructions

    Rinse chicken thigh pieces and pat dry. In a bowl, combine chicken with light soy sauce, Shaoxing wine, sesame oil, white pepper, and cornstarch. Mix well and marinate for 15 minutes.

    Rinse dried cordyceps flowers and red dates. If red dates are large, you can lightly smash them to release more flavor.

    Arrange the marinated chicken on a heatproof plate. Scatter the cordyceps flowers, red dates, and julienned ginger over the chicken.

    Drizzle with cooking oil.

    Steam over high heat for 15-20 minutes, or until the chicken is fully cooked and tender.

    Serve immediately with steamed white rice.
