In a bowl, combine chicken thigh pieces with light soy sauce, sesame oil, sugar, cornstarch, white pepper, and cooking wine. Marinate for 15 minutes.
Arrange winter melon cubes evenly at the bottom of a heatproof dish. Place the marinated chicken on top of the winter melon.
Sprinkle shredded conpoy and julienned ginger over the chicken.
Steam over high heat for 20-25 minutes, or until chicken is fully cooked and winter melon is tender.
Serve hot, optionally garnished with fresh spring onion.
