Peel and cube the pumpkin. Steam until very soft.
Mash the steamed pumpkin into a smooth paste.
In a bowl, combine coconut milk, water, and granulated sugar. Stir until sugar dissolves.
In a separate large bowl, combine glutinous rice flour and tapioca starch.
Add the mashed pumpkin to the liquid mixture. Mix well. Gradually add this pumpkin-liquid mixture to the combined flours, stirring until a smooth batter forms. Ensure no lumps.
Lightly grease a heatproof dish. Pour the batter into the prepared dish.
Steam for about 30 minutes, or until the pudding is firm and translucent. A toothpick inserted into the center should come out clean.
Let the pudding cool completely before slicing and serving. Can be served chilled.
