Ingredients

Aromatics

  • 0.5 tsp White pepper
  • 3 slices Ginger, julienned
  • 2 stalks Scallions, julienned

Sauces & Seasonings

  • 1 tsp Salt
  • 3 tbsp Cooking oil
  • 3 tbsp Light soy sauce (for dressing)
  • 1 tsp Sugar (for dressing)
  • 0.5 tsp Sesame oil (for dressing)

Other

  • 1 whole Pomfret (about 500-600g), cleaned and scored
  • 2 tbsp Water (for dressing)

Instructions

    Pat the pomfret very dry with paper towels. Season both sides with salt and white pepper.

    Heat cooking oil in a large non-stick pan over medium-high heat. Once hot, carefully place the fish in the pan.

    Pan-fry for 6-8 minutes per side, or until golden brown and cooked through. Avoid turning too frequently to get a crispy skin.

    While the fish is frying, prepare the soy sauce dressing by mixing light soy sauce, sugar, water, and sesame oil in a small bowl.

    Once the fish is cooked, transfer it to a serving plate.

    Sprinkle the julienned ginger and scallions over the hot fish.

    Heat the soy sauce dressing briefly in the pan or microwave until warm, then pour it evenly over the fish, ginger, and scallions. Serve immediately.
