Spicy Marinated Raw Crab (Yangnyeom Gejang)

Ingredients

Proteins

  • 1 kg fresh raw blue crabs
  • 30 ml fish sauce

Aromatics

  • 100 g Korean chili powder (gochugaru)
  • 60 g Korean chili paste (gochujang)
  • 2 tbsp minced garlic
  • 1 tbsp minced ginger
  • 2 stalks green onions, chopped
  • 0.5 medium onion, grated

Sauces & Seasonings

  • 60 ml soy sauce
  • 60 ml corn syrup (mulyeot) or sugar
  • 1 tbsp sesame oil
  • 1 tbsp toasted sesame seeds
  • 30 ml water or soju/rice wine

Vegetables

  • 0.25 small Korean pear, grated

Instructions

    Thoroughly clean the blue crabs. Remove gills, mouthpart, and any impurities. Cut the cleaned crabs into pieces.

    Grate the onion and Korean pear. Mince the garlic and ginger.

    In a large bowl, combine the Korean chili powder, Korean chili paste, soy sauce, fish sauce, corn syrup (or sugar), minced garlic, minced ginger, sesame oil, water (or soju/rice wine), grated onion, and grated Korean pear. Mix well until a smooth sauce forms.

    Add the prepared crabs to the sauce. Gently toss to coat all crab pieces evenly with the spicy marinade.

    Add the chopped green onions and toasted sesame seeds to the marinated crabs. Mix lightly. Transfer to an airtight container and refrigerate for at least 2 hours, or preferably overnight, for the flavors to meld.

    Serve chilled with rice.
