In a bowl, combine minced pork, chopped dried shrimp, 1/2 tbsp light soy sauce, 1/2 tsp sesame oil, white pepper, cornstarch, and sugar. Mix well until combined.
Spread the seasoned minced pork mixture evenly at the bottom of a heatproof shallow dish.
In a separate bowl, beat the eggs. Gradually whisk in the warm water, then strain the egg mixture through a fine-mesh sieve into the dish with the pork.
Place the dish in a steamer. Steam over medium heat for 15-20 minutes, or until the egg custard is just set but still wobbly in the center.
Remove from steamer. Drizzle with remaining light soy sauce and sesame oil. Garnish with chopped green onion before serving.
