Rinse the lean pork and blanch it in boiling water for a few minutes to remove impurities. Drain and set aside.

Place the blanched lean pork, snow pears, dried figs, southern apricot kernels, northern apricot kernels, and candied dates into a large soup pot. Add water.
Bring the pot to a rolling boil over high heat. Once boiling, reduce the heat to low, cover the pot, and simmer for 2 hours.
Season with salt to taste before serving.
