In a large bowl, combine minced pork, diced water chestnuts, diced dried shiitake mushrooms, light soy sauce, oyster sauce, cornstarch, sugar, white pepper, water, sesame oil, and chopped ginger. Mix well until everything is thoroughly combined and slightly sticky.
Shape the mixture into a flat patty, and place it onto a heatproof dish.
Boil water in a steamer. Once the water is boiling, place the dish with the pork patty into the steamer.
Steam for 15-20 minutes, or until the pork is cooked through and no longer pink in the center.
Garnish with chopped green onion before serving. Serve hot with steamed rice.
