Wash the Choy Sum thoroughly under running water. Trim off any tough ends.
Peel and mince the garlic cloves.
Heat cooking oil in a wok or large pan over high heat until shimmering. Add minced garlic and stir-fry until fragrant, about 15-20 seconds.
Add the Choy Sum to the wok. Stir-fry for 1-2 minutes until it starts to wilt. Add water.
Season with salt. Continue to stir-fry for another 1-2 minutes until the Choy Sum is tender-crisp and cooked through.
Transfer to a serving plate and serve immediately.
