Soak cordyceps flowers in warm water for 10 minutes, then drain. Rinse red dates and gently squeeze to soften.
Cut chicken thighs into bite-sized pieces. In a bowl, combine chicken with light soy sauce, sesame oil, cornstarch, sugar, and white pepper. Mix well and let marinate for 15 minutes.
Add the prepared cordyceps flowers, red dates, and shredded ginger to the marinated chicken. Mix gently. Transfer the mixture to a heatproof dish.
Bring water in a steamer to a rolling boil. Place the dish with the chicken mixture into the steamer. Steam for 15-18 minutes, or until the chicken is cooked through.
Carefully remove the steamed chicken and serve immediately with steamed rice.
