Soak the peach gum in a large bowl of water overnight (at least 12 hours) until fully softened and expanded. Carefully remove any impurities.
Wash the red dates and longan. For the red dates, remove the pits.
In a pot, combine water, red dates, and longan. Bring the mixture to a boil, then reduce heat and simmer.
Add the cleaned and prepared peach gum to the simmering soup.
Stir in the rock sugar until it fully dissolves and the soup is fragrant. Continue to simmer for another 15 minutes.
Serve warm or chilled as a delightful dessert.
