Rinse the peach resin and soak it in plenty of water for at least 12 hours or overnight until it expands and softens. Remove any impurities.
Rinse dried longan and red dates. Pit the red dates.
Bring water to a boil in a pot.
Add the prepared peach resin, dried longan, and red dates to the boiling water.
Reduce heat and simmer for 30 minutes.
Add rock sugar and stir until dissolved.
Turn off the heat. Let the soup cool to room temperature, then chill in the refrigerator before serving.
