Beef and Tomato Stir-fry

Ingredients

Proteins

  • 300 g beef flank or sirloin, thinly sliced
  • 1 tbsp soy sauce (for marinating beef)
  • 1 tsp cornstarch (for marinating beef)
  • 0.5 tsp sugar (for marinating beef)
  • 1 tsp cooking oil (for marinating beef)
  • 1 tsp oyster sauce
  • 0.25 cup water or beef broth

Aromatics

  • 0.5 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 stalk spring onion, chopped

Sauces & Seasonings

  • 2 tbsp cooking oil (for stir-frying)
  • 1 tbsp soy sauce (for sauce)
  • 1 tsp sugar (for sauce)
  • 0.5 tsp cornstarch mixed with 1 tbsp water (for thickening)

Vegetables

  • 2 large ripe tomatoes, cut into wedges

Other

  • 2 tbsp ketchup

Instructions

    Marinate beef slices with soy sauce, cornstarch, sugar, and cooking oil for at least 15 minutes.

    Prepare the sauce by mixing ketchup, soy sauce, oyster sauce, sugar, and water or beef broth in a small bowl. Set aside.

    Heat cooking oil in a wok over high heat. Add marinated beef slices and stir-fry quickly until lightly browned and mostly cooked, about 1-2 minutes. Do not overcook. Remove beef from wok and set aside.

    In the same wok, add sliced onion and minced garlic, stir-fry until fragrant and onion is softened, about 2-3 minutes.

    Add tomato wedges to the wok and stir-fry for 1-2 minutes until they just start to soften.

    Pour in the prepared sauce and bring to a simmer. Return the cooked beef slices to the wok.

    Stir in the cornstarch slurry and cook, stirring, until the sauce thickens and coats the beef and vegetables.

    Garnish with chopped spring onion and serve hot immediately.
