Heat vegetable oil in a wok or large frying pan over high heat. Add minced garlic and stir-fry for 15 seconds until fragrant.
Add assorted mushrooms and bamboo shoots. Stir-fry for 2-3 minutes until mushrooms begin to soften.
Add snow peas and stir-fry for another 1-2 minutes until vibrant green and tender-crisp.
Pour in light soy sauce, sugar, water/broth, and season with salt and white pepper. Stir well to combine.
Drizzle with sesame oil before serving.
