    Prepare ginger juice: Peel and grate the fresh ginger. Squeeze out the juice using a muslin cloth or a fine sieve.

    Mix egg whites and sugar: In a bowl, gently whisk the egg whites and caster sugar until combined and sugar dissolves. Do not overwhisk to create foam.

    Combine milk and ginger juice: Heat the fresh milk slightly until warm, but not boiling. Stir in the ginger juice.

    Strain mixture: Slowly pour the warm milk and ginger juice mixture into the egg white and sugar mixture, stirring constantly. Strain the entire mixture through a fine sieve into individual heatproof bowls to ensure a smooth texture.

    Steam the pudding: Cover each bowl with cling film or a plate. Place the bowls in a steamer with boiling water. Steam over low heat until the pudding sets but remains wobbly in the center, about 10-15 minutes.
