Combine milk and ginger juice: Heat the fresh milk slightly until warm, but not boiling. Stir in the ginger juice.
Strain mixture: Slowly pour the warm milk and ginger juice mixture into the egg white and sugar mixture, stirring constantly. Strain the entire mixture through a fine sieve into individual heatproof bowls to ensure a smooth texture.
Steam the pudding: Cover each bowl with cling film or a plate. Place the bowls in a steamer with boiling water. Steam over low heat until the pudding sets but remains wobbly in the center, about 10-15 minutes.
Serve: Remove from steamer and serve warm or chilled.
