Ingredients

Proteins

  • 250 g thin-sliced pork loin or belly

Aromatics

  • 1 tbsp grated fresh ginger (for marinade)
  • 2 tbsp grated fresh ginger (for sauce)

Sauces & Seasonings

  • 1 tbsp soy sauce (for marinade)
  • 3 tbsp soy sauce (for sauce)
  • 1 tbsp sake (for sauce)
  • 1 tsp sugar
  • 1 tbsp vegetable oil

Vegetables

  • 0.25 head cabbage, shredded
  • 1 optional cherry tomatoes

Other

  • 1 tbsp sake (for marinade)
  • 2 tbsp mirin
  • 1 optional mayonnaise
  • 1 optional lemon wedges

Instructions

    In a bowl, combine the thin-sliced pork with grated fresh ginger (for marinade), sake (for marinade), and soy sauce (for marinade). Mix well and let marinate for 10-15 minutes.

    While the pork marinates, prepare the sauce. In a separate small bowl, combine grated fresh ginger (for sauce), soy sauce (for sauce), mirin, sake (for sauce), and sugar. Stir until the sugar dissolves.

    Heat vegetable oil in a large skillet or frying pan over medium-high heat. Add the marinated pork slices in a single layer and cook for about 2-3 minutes per side, until browned and cooked through. You may need to cook in batches to avoid overcrowding the pan.

    Once all pork is cooked, return it to the skillet (if cooked in batches). Pour the prepared ginger sauce over the pork. Simmer for 1-2 minutes, tossing gently, until the sauce thickens and coats the pork slices evenly.

    Serve immediately with fresh shredded cabbage. Garnish with mayonnaise, cherry tomatoes, and lemon wedges if desired.
