Stuff the chicken cavity with some ginger slices and green onions.
Place the blanched chicken in a large heatproof bowl or ceramic pot.
Arrange the Cordyceps Sinensis, red dates, goji berries, dried longan, Huai Shan, and remaining ginger slices around and inside the chicken.
Season the chicken with salt, white pepper, and Shaoxing wine.
Pour water over the chicken until it is mostly submerged.
Steam the chicken over high heat for approximately 90-100 minutes, or until tender.
Garnish with green onions before serving.
