Ingredients

Proteins

  • 300 g Ground pork
  • 50 g Pork fat (or lard)
  • 1 tsp Chicken powder
  • 1 egg Egg, beaten

Aromatics

  • 20 g Ginger, minced
  • 2 stalks Scallions, chopped
  • 0.5 tsp White pepper powder
  • 2 tbsp Chili oil
  • 1 tbsp Fried shallots (optional garnish)

Sauces & Seasonings

  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 l Vegetable oil for deep frying

Other

  • 24 pieces Wonton wrappers

Instructions

    In a bowl, combine ground pork, pork fat, ginger, scallions, soy sauce, sesame oil, chicken powder, and white pepper powder. Mix well until the filling is sticky and well-combined.

    Place about 1 teaspoon of filling in the center of each wonton wrapper.

    Wet the edges of the wonton wrapper with beaten egg. Fold the wrapper in half diagonally to form a triangle, then bring the two corners together and seal to form a traditional wonton shape.

    Heat the vegetable oil to 175°C (350°F) in a deep pot or wok.

    Carefully place wontons into the hot oil in batches, ensuring they don't stick together. Fry for 2-3 minutes until golden brown and crispy, stirring occasionally.

    Remove the fried wontons with a slotted spoon and drain on paper towels.

    Arrange the fried wontons on a serving plate. Drizzle with chili oil and garnish with fried shallots if desired.
